A Must Try: Mountain Dew Chicken and Veggies in the Dutch Oven

It is unique, but it is really delicious! Seems a bit odd to use a carbonated soft drink when cooking a meal like this, but trust us – this is delicious. Even if you are not a fan of Mountain Dew, you will like the results of this all-in-one meal.

One could certainly cook this in the regular oven, but once in awhile, we like to get a fire going in the afternoon and cook in the dutch oven while having a beverage and rocking in our camp chairs. There is something a little extra that is added to the meal when cooked outdoors and over a wood fire.

Most of the ingredients can be prepared ahead of time and placed in one or more plastic bags for easy assembly when the coals are ready. If you are concerned about the diced potatoes turning brown, you could use frozen country style hash browns or soak the diced fresh potatoes in cold water mixed with a little lemon juice. It won’t change the taste, but the acidity will keep them from browning after you bag them.

Ingredients

  • 1/4 lb. bacon
  • 1 gallon zip-loc bag with 1 cup flour
  • 2 large chicken breasts
  • 2 large potatoes
  • 5 carrots
  • 1/2 large onion
  • 1 can Mountain Dew soda
  • 1/2 cup shredded cheddar cheese

Instructions:

  • Preheat dutch oven by setting on bed of coals.
  • Chop bacon into 1-inch pieces.
  • Dice vegetables.
  • Cut chicken breasts in half lengthwise.
  • Fry bacon in dutch oven until crispy.
  • Remove bacon from d.o. but leave grease.
  • Shake chicken breasts in baggie of flour to coat.
  • Cook in bacon grease to brown, about 5 minutes, turning a couple times.
  • Pour vegetables, bacon, and Mountain Dew on top of chicken.
  • Cover with lid and cook at 350F for 45 minutes with 3/4 of coals on lid.
  • Using tongs or fork, lift chicken breasts so they are resting on top of vegetables.
  • Sprinkle cheese over the chicken.
  • Cook an additional 10 to 15 minutes.
