Smokin’ Good Food!

Add a little smoke flavor the easy way!

It probably comes as no surprise that we are fans of a little smoke flavor in most of our foods. Now, we could certainly run out and buy a mini-smoker to carry around with us and believe me, the thought is there. But, for now, we use a little smokebox like the one pictured below to inject a bit of smoke to whatever we are grilling.

You can buy wood chips or pellets for smoking at most big box stores, hardware stores, or dealers that handle smoker equipment. Make sure that the wood or pellets are for smoking food and not to be used as fuel as the latter may include additives within the wood. The idea is that you place wood chips or pellets in the box and as they smolder, smoke fills the grill chamber, which in turn flavors the food.

We usually use no more than a partial smoke box of wood or pellets. You can either light the wood with a small propane torch and then blow out the flame prior to placing the closed box in the grill or just place the box over low heat in the grill and the wood will begin to smoke in a few minutes.

Once it is smoking, grill your food as normal alongside the box in the grill.

One of the recipes that “goes up a notch” with the smoke is the marinated pork tenderloin with cream sauce. No changes to the recipe, just grill the meat alongside the smoke box!
